This satisfying soup is free of all animal products and can even aid in the detoxification process. Green leafy veggies are alkalizing, full of fiber, vitamins, minerals and phytonutrients. They are the MOST frequent missing ingredient in the modern diet, so this soup is a wonderful way to get your greens in for the day, while aiding in digestion and elimination to support your month of cleanse!
Creamless Spinach Soup
2 Servings
Ingredients:
- 1 pound spinach
- 1/2 cup diced onion
- 1/2 cup diced carrots
- 1/2 cup diced celery
- 1/2 cup diced leek
- 3 cups water
- 1/2 teaspoon Thyme
- 1 tablespoon olive oil
1/2 teaspoon chopped garlic
Preparation:
Saute the onions, carrots, celery, and leek in a pot with the oil and garlic. Add the water and Thyme, simmer for one hour and then leave to cool for one hour. Puree in a blender, then put back in the pot on medium heat. Add the spinach, cook until it wilts, and serve hot!
